Oyster (or tree) mushrooms have fan-shaped caps that range in colour from pale to dark greyish-brown. They grow in tight clusters and have a mild flavour when cooked. Add chopped oyster mushrooms to sauces and stir-fries, or sauté with butter for a simple side dish.
